Cabbage & Apple Slaw (Fresh & Zingy)

Ingredients:

  • 300 g white cabbage, finely shredded

  • 1 large apple (150 g), julienned

  • 1 small carrot (80 g), grated

  • 2 spring onions, sliced

  • 2 tbsp apple cider vinegar (30 ml)

  • 1 tbsp olive oil (15 ml)

  • 1 tsp maple syrup (5 ml)

  • Salt & pepper

  • Optional: toasted pumpkin seeds

Method:

  1. In a large bowl, mix cabbage, apple, carrot, and spring onion.

  2. In a small jar, shake together vinegar, olive oil, maple, salt & pepper.

  3. Pour dressing over the slaw. Toss well.

  4. Let it sit for 10-15 mins to soften.

  5. Sprinkle with pumpkin seeds before serving.
