Cabbage & Apple Slaw (Fresh & Zingy)
Ingredients:
300 g white cabbage, finely shredded
1 large apple (150 g), julienned
1 small carrot (80 g), grated
2 spring onions, sliced
2 tbsp apple cider vinegar (30 ml)
1 tbsp olive oil (15 ml)
1 tsp maple syrup (5 ml)
Salt & pepper
Optional: toasted pumpkin seeds
Method:
In a large bowl, mix cabbage, apple, carrot, and spring onion.
In a small jar, shake together vinegar, olive oil, maple, salt & pepper.
Pour dressing over the slaw. Toss well.
Let it sit for 10-15 mins to soften.
Sprinkle with pumpkin seeds before serving.
